Authentic Tom Kha Gai Soup is a Thai coconut chicken soup infused with galangal, lemongrass, lime, and herbs for a creamy and aromatic dish.

Ingredients

2 cups chicken broth
1 1/2 cups full-fat coconut milk
1 pound boneless skinless chicken breast sliced thin
3 slices galangal
1 stalk lemongrass bruised and cut into pieces
3 kaffir lime leaves torn
1 cup mushrooms sliced
2 tablespoons fish sauce
1 to 2 Thai chilies sliced
2 tablespoons fresh lime juice
Fresh cilantro for garnish

Instructions

  1. Simmer broth and half the coconut milk with galangal, lemongrass, and lime leaves for 5 minutes.
  2. Add sliced chicken and cook 5 to 7 minutes.
  3. Stir in mushrooms and cook 3 to 4 minutes.
  4. Add remaining coconut milk and season with fish sauce and chilies.
  5. Remove from heat and stir in lime juice.
  6. Garnish with cilantro and serve.

Notes

Do not boil vigorously after adding coconut milk.
Adjust spice level by changing chili quantity.
Remove large herb pieces before serving.
