1 1/2 cups full-fat coconut milk
1 pound boneless skinless chicken breast sliced thin
3 slices galangal
1 stalk lemongrass bruised and cut into pieces
3 kaffir lime leaves torn
1 cup mushrooms sliced
2 tablespoons fish sauce
1 to 2 Thai chilies sliced
2 tablespoons fresh lime juice
Fresh cilantro for garnish
Do not boil vigorously after adding coconut milk.
