Fresh Thai basil beef rolls wrapped in rice paper with crisp veggies, herbs, and savory ground beef. Light, flavorful, and perfect for summer meals.

Ingredients

1 lb lean ground beef
2 cloves garlic, minced
2 tbsp soy sauce
1 tsp fish sauce (optional)
Juice of ½ lime
1 cucumber, julienned
1 red bell pepper, sliced
12 carrots, shredded
Fresh Thai basil leaves
Optional: mint or cilantro
810 rice paper wrappers
Lettuce or spinach leaves

Dipping Sauce:
3 tbsp soy sauce
2 tbsp rice vinegar
1 tsp sesame oil
1 tsp honey or maple syrup
1 tsp chili garlic paste (optional)

Instructions

  1. Cook beef with garlic in oil until browned. Add soy sauce, fish sauce, lime juice. Let cool.
  2. Prepare vegetables and herbs.
  3. Dip rice paper in warm water until soft. Lay on damp towel.
  4. Layer lettuce, beef, vegetables, and herbs.
  5. Fold sides in and roll tightly.
  6. Repeat with remaining wrappers.
  7. Mix dipping sauce ingredients.
  8. Serve rolls with sauce on the side.

Notes

Use tofu or turkey instead of beef. Add vermicelli noodles or mango for variation. Store with damp paper towel to keep fresh.
