Char siu chicken is a sweet, sticky, and savory Chinese-style dish made with marinated chicken thighs roasted to perfection in a glossy, caramelized glaze of hoisin, soy, honey, and five-spice.

Ingredients

2 lbs boneless chicken thighs
¼ cup hoisin sauce
2 tbsp soy sauce
1 tbsp oyster sauce (optional)
2 tbsp honey or brown sugar
1 tsp Chinese five-spice powder
2 garlic cloves, minced
1 tsp fresh ginger, grated
1 tbsp rice vinegar or Shaoxing wine
1 tsp sesame oil
Red food coloring (optional)

Instructions

  1. Whisk marinade ingredients in a bowl.
  2. Add chicken and marinate 2 hours or overnight.
  3. Preheat oven to 400°F. Line pan with foil and rack.
  4. Roast chicken 25–30 mins, flipping halfway.
  5. Brush with marinade during baking.
  6. Broil 2–3 mins for caramelized edges.
  7. Rest 5 mins, slice, and serve warm.

Notes

Grill for smoky flavor. Use tamari for gluten-free. Try on tofu or mushrooms for a vegetarian twist.
