A hearty, one-pot Steak & Potato Soup made with seared beef, tender potatoes, vegetables, and savory herbs. The ultimate comfort food in a bowl.

Ingredients

  • 1 lb sirloin or chuck steak, cubed
  • 1 tbsp olive oil
  • 1 tbsp butter (optional)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 stalks celery, diced
  • 2 carrots, sliced
  • 3 cups Yukon Gold or Russet potatoes, peeled and cubed
  • 4 cups low-sodium beef broth
  • 1 tsp dried thyme
  • ½ tsp rosemary
  • 1 bay leaf
  • Salt and pepper to taste
  • Fresh parsley or chives (for garnish)
  • Optional: 1 tbsp flour or cornstarch slurry

Instructions

  1. Season and sear steak cubes in olive oil until browned. Remove and set aside.
  2. Sauté onion, celery, and carrot in the same pot until soft. Add garlic and cook briefly.
  3. Deglaze with broth or red wine. Add potatoes, herbs, seared steak, and remaining broth.
  4. Simmer 20–25 minutes until potatoes are tender. Thicken if desired.
  5. Remove bay leaf. Taste and adjust seasoning. Garnish and serve warm.

Notes

  • Use red potatoes for a firmer texture.
  • For a thicker soup, mash some potatoes or use a cornstarch slurry.
  • Store in fridge up to 4 days or freeze for up to 2 months.
