Light and elegant smoked salmon cucumber roll-ups made with herbed cream cheese, lemon, and fresh herbs — perfect for brunch, appetizers, or low-carb snacking
1 large English cucumber
4 oz cream cheese, softened
1 tbsp chopped fresh dill
½ tsp lemon zest
3 oz cold-smoked salmon
Salt and pepper, to taste
Optional: capers, avocado, microgreens, everything bagel seasoning
Slice cucumber lengthwise into thin ribbons using a mandoline or peeler.
In a bowl, mix cream cheese, dill, lemon zest, salt, and pepper until smooth.
Lay out a cucumber ribbon, spread a thin layer of the cream cheese mixture, and place a strip of salmon at one end.
Roll tightly and place seam-side down. Repeat with remaining ingredients.
Chill 10–15 minutes if desired. Garnish and serve.
Use dairy-free cream cheese if needed.
Avoid overfilling to keep roll-ups tight.
Serve with crackers or greens for a heartier dish
