Light and elegant smoked salmon cucumber roll-ups made with herbed cream cheese, lemon, and fresh herbs — perfect for brunch, appetizers, or low-carb snacking

  • 1 large English cucumber

  • 4 oz cream cheese, softened

  • 1 tbsp chopped fresh dill

  • ½ tsp lemon zest

  • 3 oz cold-smoked salmon

  • Salt and pepper, to taste

  • Optional: capers, avocado, microgreens, everything bagel seasoning

Instructions

  1. Slice cucumber lengthwise into thin ribbons using a mandoline or peeler.

  2. In a bowl, mix cream cheese, dill, lemon zest, salt, and pepper until smooth.

  3. Lay out a cucumber ribbon, spread a thin layer of the cream cheese mixture, and place a strip of salmon at one end.

  4. Roll tightly and place seam-side down. Repeat with remaining ingredients.

  5. Chill 10–15 minutes if desired. Garnish and serve.

Notes

  • Use dairy-free cream cheese if needed.

  • Avoid overfilling to keep roll-ups tight.

  • Serve with crackers or greens for a heartier dish
