1 ½ lbs boneless skinless chicken thighs or breasts, diced
3 medium potatoes, chopped
3 carrots, sliced
2 celery stalks, diced
1 yellow onion, diced
3 garlic cloves, minced
4 cups chicken broth
2 tbsp tomato paste
1 tsp salt
½ tsp black pepper
1 tsp dried thyme
1 bay leaf
(Optional) 2 tbsp cornstarch + 2 tbsp water
Fresh parsley, for garnish
Instructions
Add chicken, vegetables, garlic, broth, tomato paste, and seasonings to slow cooker.
Stir, cover, and cook on Low for 6–7 hours or High for 3–4 hours.
For thicker stew, mix cornstarch with water and stir in during the last 15–20 minutes.
Remove bay leaf, adjust seasoning, and garnish with parsley before serving.
Notes
Add greens or mushrooms for variety. Can be frozen for up to 3 months.
