This Crock Pot Creamy Chicken Parmesan Soup combines the rich flavor of Chicken Parm with the ease of a slow cooker. It’s cozy, cheesy, and perfect for a no-fuss dinner.

Ingredients

  • 1.52 lbs boneless, skinless chicken breasts or thighs
  • 1 (28 oz) can crushed tomatoes
  • 4 cups chicken broth (low-sodium)
  • 2 tbsp tomato paste
  • 1 tsp Italian seasoning
  • 3 cloves garlic, minced
  • Salt and pepper, to taste
  • 4 oz cream cheese, cubed
  • ½ cup grated parmesan
  • ¼ cup heavy cream (optional)
  • 1 cup baby spinach (optional)
  • 1 cup short pasta (optional)

Instructions

  1. Add chicken, tomatoes, broth, tomato paste, garlic, Italian seasoning, salt, and pepper to crock pot. Stir.
  2. Cook on low for 6–8 hours or high for 3–4 hours until chicken is tender.
  3. Remove chicken, shred with forks, return to soup.
  4. Stir in cream cheese and parmesan. If using pasta, add now and cook on high for 30 minutes.
  5. Stir in cream and spinach, if using. Heat through and serve hot.

Notes

  • For spicier soup, add red pepper flakes.
  • Dairy-free version: Use dairy-free cream cheese and nutritional yeast.
  • Store leftovers in fridge for up to 4 days or freeze for 2 months.
