Skillet Dinner Recipe: Garlic Butter Chicken & Potatoes

A one-pan dinner of golden seared chicken and crispy potatoes tossed in a rich garlic herb butter sauce — comforting, flavorful, and perfect for weeknights.

Ingredients

  • lbs boneless skinless chicken thighs or breasts
  • lbs baby potatoes, halved
  • 3 tbsp unsalted butter
  • 2 tbsp olive oil
  • 56 cloves garlic, minced
  • 1 tsp fresh thyme
  • 1 tsp fresh rosemary
  • Salt and pepper to taste
  • Fresh parsley and lemon juice for garnish

Instructions

  1. Par-boil potatoes until fork tender, then drain.
  2. Season and sear chicken until golden and cooked through. Set aside.
  3. Crisp potatoes in same skillet. Set aside.
  4. Melt butter, add garlic and herbs. Sauté 1 minute.
  5. Return chicken and potatoes to skillet. Toss in garlic butter. Cover and simmer 5 minutes.
  6. Garnish and serve hot.

Notes

Add broth for more sauce, or veggies for a full one-dish meal. Great for leftovers and meal prep.
