A hearty casserole of roasted ranch-seasoned potatoes, savory smoked sausage, and melted cheddar—perfect for dinner, meal prep, or potlucks.

  • lbs baby red or Yukon gold potatoes, diced
  • 14 oz smoked sausage, sliced
  • 23 tbsp olive oil
  • 1 ranch seasoning packet (about 3 tbsp)
  • 1½ cups shredded cheddar cheese
  • Salt & pepper to taste
  • Optional: sour cream, chopped green onions, parsley

Instructions

  1. Preheat oven to 400°F. Grease a 9×13 baking dish.
  2. Toss diced potatoes with olive oil and ranch seasoning.
  3. Roast for 25–30 minutes, flipping halfway.
  4. Add sliced sausage, toss, and bake 15 minutes more.
  5. Sprinkle cheese over top. Bake another 5–7 minutes.
  6. Garnish with green onions or parsley. Serve hot.
