Tender chicken in a creamy Boursin cheese sauce infused with garlic and herbs. An easy, satisfying weeknight dinner that’s rich, smooth, and comforting.

Ingredients

23 boneless chicken breasts or thighs
1 tbsp butter
1 tbsp olive oil
1 shallot, finely chopped
½ cup low-sodium chicken broth
1 round (5.2 oz) Boursin Garlic & Fine Herbs cheese
Salt and black pepper to taste
Optional: spinach, peas, fresh parsley for garnish

Instructions

  1. Season chicken with salt and pepper.
  2. Heat butter and oil in skillet. Sear chicken 4–5 mins per side. Set aside.
  3. Sauté shallot for 2–3 mins.
  4. Deglaze pan with broth, scraping bottom.
  5. Stir in Boursin cheese until melted and smooth.
  6. Return chicken to pan, simmer 2–3 mins.
  7. Stir in spinach or peas if using.
  8. Garnish and serve hot.

Notes

Use thin cutlets for quicker cooking. Substitute with other Boursin flavors. Serve over pasta, potatoes, or greens.
