1 cup self-rising flour (or high-protein flour blend)
1 cup plain Greek yogurt
⅓ cup pizza sauce
¾ cup shredded part-skim mozzarella
20 slices turkey or regular pepperoni
1 egg, beaten (for egg wash)
1 tsp Italian seasoning
1 tbsp grated parmesan (optional)
Instructions
Preheat oven to 375°F (190°C). Line a baking sheet with parchment.
Mix flour and Greek yogurt until a dough forms. Knead until smooth.
Roll dough into a ¼-inch thick rectangle.
Spread sauce, cheese, and pepperoni evenly across dough.
Roll up tightly from the long side and slice into 8 rolls.
Arrange rolls on the baking sheet, cut side up.
Brush with egg wash and sprinkle with parmesan and seasoning.
Bake 20–25 minutes or until golden brown and bubbling.
Let cool 5 minutes before serving.

Use turkey pepperoni for a leaner option.
