Portuguese-inspired spicy grilled or roasted chicken marinated in a fiery garlic-chili-citrus sauce—perfect for bold, juicy dinners and easy entertaining.

Ingredients

2 lbs chicken thighs or drumsticks
34 red chilies (Fresno, bird’s eye, or red jalapeños)
4 cloves garlic
2 tsp smoked paprika
1 tsp dried oregano
1 tbsp red wine vinegar
Zest and juice of 1 lemon
3 tbsp olive oil
1 tsp salt
½ tsp black pepper

Instructions

  1. Blend chilies, garlic, paprika, oregano, vinegar, lemon, oil, salt, and pepper into a smooth marinade.
  2. Marinate chicken in mixture (reserve ¼ cup for basting) for at least 2 hours or overnight.
  3. Preheat grill or oven to 400°F.
  4. Grill or roast chicken 35–40 mins, basting with reserved marinade, until internal temp reaches 165°F.
  5. Rest 5–10 minutes before serving.

Notes

Use fewer chilies for a milder version. Serve with potatoes, rice, or salad. Great for leftovers or meal prep.
