This Oven Roasted Garlic Butter Chicken features crispy, golden skin and juicy, tender meat, all coated in a rich garlic herb butter. A simple, mouthwatering dinner ready in under an hour.

Ingredients

  • 6 bone-in, skin-on chicken thighs (or breasts/drumsticks)
  • ½ cup (1 stick) unsalted butter
  • 6 cloves garlic, minced
  • 1 tbsp fresh thyme or rosemary, chopped
  • 1 tbsp lemon juice or zest
  • Salt and black pepper, to taste
  • Fresh parsley, for garnish

Instructions

  1. Preheat oven to 400°F (200°C). Pat chicken dry and season with salt and pepper.
  2. In a saucepan, melt butter. Stir in garlic, herbs, and lemon.
  3. Arrange chicken on a baking sheet. Brush generously with garlic butter.
  4. Roast for 35–45 minutes, basting once halfway through.
  5. Optional: Broil for 2–3 minutes to crisp the skin.
  6. Rest 5–10 minutes. Garnish with parsley and serve hot.

Notes

  • Use boneless chicken for faster cooking.
  • Add vegetables to the pan for a one-pan meal.
