1 lb lean ground beef
1 tbsp olive oil
1 small onion, diced
1 (4 oz) can diced green chiles (optional)
2–3 tbsp taco or enchilada seasoning
1/4 cup water
8 corn tortillas
1 (15 oz) can red enchilada sauce
1.5–2 cups shredded cheddar or Monterey Jack cheese
Salt and pepper to taste
Optional toppings: sour cream, cilantro, avocado
