2 boneless skinless chicken breasts
2 tablespoons olive oil
1 tablespoon butter
8 oz cremini mushrooms, sliced
2 cloves garlic, minced
1 small shallot or ½ onion, diced
½ cup low-sodium chicken broth
¾ cup heavy cream (or half-and-half)
⅓ cup grated Parmesan cheese
1 tsp fresh thyme or ½ tsp dried
Salt and pepper to taste
Fresh parsley, for garnish
Instructions
Season chicken with salt and pepper. Sear in olive oil over medium-high heat until golden and cooked through. Remove and set aside.
In the same skillet, melt butter. Add mushrooms and sauté until browned.
Add shallots and garlic; cook until soft and fragrant.
Deglaze with chicken broth, scraping the pan. Simmer 2–3 minutes.
Reduce heat and stir in cream and Parmesan. Cook until sauce thickens slightly.
Return chicken to the pan and simmer for 3–5 minutes.
Garnish with parsley and serve hot.
Notes
Use chicken thighs for a richer version.
Lighten it up with milk + cornstarch instead of cream.
