One-pan Cheesy Ranch Potatoes and Smoked Sausage with golden roasted potatoes, zesty ranch flavor, gooey cheddar cheese, and juicy sausage slices. Easy, hearty, and crowd-pleasing.

1.52 lbs baby potatoes, quartered
1214 oz smoked sausage, sliced
1 packet (1 oz) dry ranch seasoning mix
2 tbsp olive oil
1 cups shredded cheddar cheese
Optional: green onions or parsley, chopped

Instructions

  1. Preheat oven to 400°F. Line or grease baking sheet or casserole dish.
  2. Toss potatoes with oil and ranch seasoning in a large bowl.
  3. Add sliced sausage and mix well.
  4. Spread in a single layer on the pan.
  5. Bake 25–30 min, stirring halfway, until potatoes are golden.
  6. Top with cheese and bake 5–7 min more.
  7. Garnish with green onions and serve.

Notes

Add chopped peppers or broccoli for more veggies.
Use sweet potatoes or cauliflower for variation.
Great for meal prep—reheats well.
