2.5–3 lbs bone-in, skin-on chicken thighs or drumsticks
Salt & pepper, to taste
1/2 cup unsalted butter, softened
6–8 garlic cloves, minced
1 tbsp chopped parsley
1 tsp dried thyme or rosemary
1 tbsp lemon juice + 1 tsp zest (optional)
1 tbsp olive oil
Optional: baby potatoes, lemon slices, carrots
Instructions
Preheat oven to 425°F. Pat chicken dry and season both sides with salt and pepper.
In a bowl, mix softened butter, garlic, herbs, lemon (if using), and olive oil.
Rub or brush garlic butter generously over chicken, getting under the skin where possible.
Arrange chicken in a baking dish or oven-safe skillet. Add veggies or lemon slices if using.
Roast 35–45 minutes, until skin is golden and internal temp reaches 165°F. Broil last 2–3 mins if needed.
Let rest 5–10 minutes. Spoon over pan juices and garnish with fresh herbs.
Notes
Use boneless cuts for quicker cooking (adjust time accordingly).
Add extra garlic cloves or veggies to the pan for even more flavor.
Reheat leftovers in oven or use cold for wraps and salads.
