1 cup red lentils, rinsed
1 tbsp olive or coconut oil
1 small onion, diced
3 garlic cloves, minced
1 tbsp grated ginger
1 tsp turmeric
1 tsp cumin seeds or ¾ tsp ground cumin
2 carrots, diced
4 cups vegetable broth or water
½ tsp salt
¼ tsp black pepper
1 lemon, juiced and zested
Fresh cilantro or parsley, for garnish (optional)
Add lemon at the end for freshness. Stir occasionally while simmering to prevent sticking.
