1½ lbs boneless chicken thighs or breasts
½ cup BBQ sauce
2 tbsp honey
1 tbsp olive oil
1 tsp smoked paprika
½ tsp garlic powder
½ tsp salt
¼ tsp black pepper
1 cup uncooked rice (white or brown)
½ cup corn (grilled or canned)
½ cup black beans, drained
¼ cup red onion or scallions, diced
Fresh cilantro, lime wedges for garnish
Optional: avocado, shredded lettuce, hot sauce
Instructions
Cook rice according to package directions; fluff and set aside.
Marinate chicken with BBQ sauce, honey, oil, and spices for 15–30 minutes.
Sear chicken in a hot skillet until cooked through and glazed. Let rest, then slice.
Warm corn and black beans. Prep toppings.
Assemble bowls: rice, sliced chicken, toppings, and drizzle of BBQ sauce. Garnish with lime and cilantro.
Notes
Use rotisserie chicken for a quick shortcut.
