1 lb boneless skinless chicken breasts, diced
2 cups cooked rice (white or brown)
1 bell pepper, thinly sliced
½ red onion, sliced
2 cloves garlic, minced
½ cup honey BBQ sauce
1 tbsp olive oil or avocado oil
Salt & pepper to taste
Optional: fresh parsley or green onions for garnish
Instructions
Heat oil in a skillet over medium-high heat.
Add chicken and cook 6–8 minutes until browned and cooked through.
Add garlic, onion, and bell pepper; sauté 3–4 minutes.
Stir in BBQ sauce; reduce heat and simmer for 2–3 minutes.
