Fresh, protein-packed Greek chicken bowls loaded with crisp veggies, whole grains, and tangy feta — perfect for meal prep or clean, satisfying lunches.

Ingredients

  • 1.5 lbs boneless chicken breast or thighs
  • 2 tbsp olive oil
  • Juice + zest of 1 lemon
  • 3 garlic cloves, minced
  • 1 tsp dried oregano
  • Salt & pepper, to taste
  • 2 cups cooked brown rice or quinoa
  • 1 cup cucumber, chopped
  • 1 cup cherry tomatoes, halved
  • 1/2 small red onion, sliced
  • 1/4 cup kalamata olives (optional)
  • 1/2 cup crumbled feta cheese

Instructions

  1. Marinate chicken in olive oil, lemon, garlic, oregano, salt, and pepper for 30 min.
  2. Cook chicken in a skillet or grill pan until golden and cooked through.
  3. Slice chicken. Divide grains, veggies, and chicken among 4 containers.
  4. Top with feta and olives. Serve with lemon wedges or tzatziki.

Notes

  • Use cauliflower rice for a low-carb version.
  • Store up to 4 days in the fridge.
  • Keep sauce separate until ready to serve.
