1 pound lean ground beef 90 to 93 percent lean
1 cup uncooked jasmine rice
2 cloves garlic minced
1 teaspoon grated fresh ginger
1/4 cup low-sodium soy sauce
1 tablespoon honey or coconut sugar
1 teaspoon sesame oil
1 tablespoon rice vinegar
1 cup shredded carrots
1 cup sliced cucumber
2 green onions chopped
1 teaspoon sesame seeds optional

Instructions

  1. Cook rice according to package instructions and set aside.
  2. Brown ground beef in skillet over medium-high heat.
  3. Add garlic and ginger and cook briefly.
  4. Mix soy sauce, honey, sesame oil, and vinegar.
  5. Pour sauce over beef and simmer 2 to 3 minutes.
  6. Divide rice into four containers.
  7. Top with beef mixture and vegetables.
  8. Garnish with green onions and sesame seeds.

Notes

Use low-sodium soy sauce to control salt.
Add gochujang for extra spice if desired.
