1 lb chicken breast, sliced
1 cup brown rice or 2½ cups cauliflower rice
½ red onion, sliced
1 bell pepper, sliced
½ cup corn kernels
½ cup black beans (optional)
1 cup cherry tomatoes, halved
1 cup shredded romaine or spinach
¼ avocado per serving
Fresh cilantro, lime wedges
For the Dressing:
2 tbsp lime juice
1 tsp olive oil
1 clove garlic, minced
¼ tsp cumin
Salt & pepper
Instructions
Season and grill chicken until golden and cooked through. Slice thin.
Cook brown rice or sauté cauliflower rice with lime juice.
Sauté onions and bell peppers until tender.
Whisk dressing ingredients in a small bowl.
Assemble bowls: base, chicken, veggies, avocado, dressing, herbs.
