Leftover Turkey Soup Perfect for Meal Prep

A cozy and comforting soup made with leftover turkey, hearty vegetables, and rich broth. Perfect for using up holiday leftovers and warming up chilly days.

Ingredients

23 cups cooked turkey, shredded or chopped
1 onion, diced
2 carrots, peeled and chopped
2 celery stalks, chopped
2 garlic cloves, minced
2 medium potatoes, peeled and cubed
1 tbsp olive oil or butter
6 cups turkey or chicken broth
1 tsp dried thyme
1 bay leaf
1 cup green beans or peas (fresh or frozen)
Salt and black pepper, to taste
2 tbsp chopped parsley
Optional: lemon juice for brightness

Instructions

  1. Heat oil in large pot over medium heat. Add onion, carrot, and celery. Cook 6–7 minutes.
  2. Stir in garlic, thyme, and bay leaf. Cook 1 minute more.
  3. Pour in broth and add potatoes. Bring to boil, reduce to simmer 15–20 minutes.
  4. Add turkey and green beans. Simmer 5–7 minutes until heated through.
  5. Remove bay leaf. Season with salt, pepper, and lemon juice. Stir in parsley.
  6. Serve hot with bread or crackers.

Notes

Add rice, noodles, or spinach as desired. Freeze for up to 3 months. Use chicken if no turkey is available.
