1 lb ground beef (85–90% lean)
3 cloves garlic, minced
1 tbsp fresh ginger, grated
1 tbsp oil
1/4 cup soy sauce or tamari
2–3 tbsp brown sugar
1 tsp sesame oil
1/2 tsp red pepper flakes or gochugaru
1 tbsp rice vinegar or mirin (optional)
Cooked white or brown rice, for serving
Toppings: green onions, sesame seeds, veggies, fried egg
Instructions
Cook rice and keep warm.
In a skillet, brown ground beef in oil until cooked through. Drain excess fat.
Stir in garlic and ginger. Cook 1 minute.
Whisk together soy sauce, sugar, sesame oil, chili flakes, and vinegar. Pour over beef and simmer 2–3 minutes.
Serve beef over rice. Top with green onions, sesame seeds, and your favorite toppings.
Notes
Make it low-carb with cauliflower rice.
