Korean Corn Cheese is a creamy, cheesy, and sweet-savory side dish made with corn, mayo, and mozzarella. It’s a classic Korean BBQ favorite that’s easy to make at home in under 15 minutes.
1 can (15 oz) sweet corn, drained (or 1½ cups fresh/frozen corn)
1 tbsp butter
2½ tbsp mayonnaise (preferably Kewpie)
1 tsp sugar (adjust to taste)
1 to 1½ cups shredded mozzarella cheese
Salt to taste
1 green onion, chopped (optional)
Heat butter in a skillet over medium heat.
Add corn and sauté for 3–4 minutes.
Stir in mayo, sugar, and salt. Cook for 1–2 more minutes.
Sprinkle cheese evenly over the top.
Cover to melt, or broil/bake until bubbly and golden.
Garnish with green onions. Serve hot.
Add jalapeños or kimchi for a flavor twist.
Use part cheddar for a sharper taste.
For meal prep, prepare corn mixture ahead and top with cheese when ready to bake.
