Tender slow-cooked beef bites in garlic butter sauce. High in protein, low in carbs, and perfect for easy dinners or meal prep.
2–2½ lbs beef chuck roast, cubed
6 garlic cloves, minced or smashed
⅓ cup unsalted butter, cut into chunks
½ cup beef broth (low-sodium)
1 tbsp Worcestershire sauce
1½ tsp Italian seasoning
Salt and pepper to taste
Optional: 1 tbsp chopped parsley for garnish
Season beef with salt and pepper. Optional: Sear in a hot pan for 2–3 minutes per side.
Add beef, garlic, butter, broth, Worcestershire, and seasoning to slow cooker.
Cook on LOW 6–7 hours or HIGH 3–4 hours until tender.
Optional: Stir in a cornstarch or arrowroot slurry to thicken. Cook 15 more minutes.
Serve over cauliflower mash or veggies. Garnish with parsley.
Add mushrooms in the last hour for extra flavor.
Use ghee for dairy-free or paleo versions.
Leftovers freeze well and reheat easily.
