Freezer-friendly, high-protein breakfast burritos filled with eggs, lean sausage, veggies, and cheese. Perfect for meal prep and quick mornings.

Ingredients

68 large eggs
1/2 lb turkey sausage or 6 slices bacon, cooked
1/2 cup onion, diced
1/2 cup bell pepper, diced
1/4 cup cooked black beans or potatoes (optional)
1/2 cup shredded cheddar or Monterey Jack cheese
4 high-protein tortillas (810 inch)
Salt, pepper, garlic powder, to taste
Optional: hot sauce, salsa

Instructions

  1. Cook sausage or bacon. Set aside.
  2. Sauté onion and peppers until soft.
  3. Scramble eggs in pan. Stir in meat, beans/potatoes.
  4. Add cheese. Let filling cool slightly.
  5. Spoon filling into tortillas. Roll into burritos.
  6. Wrap tightly. Freeze or refrigerate.

Notes

To reheat: microwave 2–3 min or bake at 350°F for 20 min. Customize with your favorite fillings. Great for busy mornings.
