This High Protein Berry Bake is a healthy, make-ahead breakfast packed with oats, berries, Greek yogurt, and optional protein powder — soft, satisfying, and naturally sweetened.

Ingredients

2 cups rolled oats
1 tsp baking powder
1/2 tsp cinnamon
1/4 tsp salt
2 eggs
1 cup milk (dairy or plant-based)
1/2 cup plain Greek yogurt
1/4 cup maple syrup or honey
1 tsp vanilla extract
1½ cups mixed berries (fresh or frozen)
Optional: 1/4 cup vanilla protein powder
Optional: 1 tbsp chia or flaxseed
Instructions
Preheat oven to 350°F. Grease an 8×8 baking dish.
In a bowl, mix oats, baking powder, cinnamon, salt, and optional seeds.
In another bowl, whisk eggs, milk, yogurt, sweetener, vanilla, and protein powder.
Combine wet and dry ingredients. Fold in berries, saving a few for topping.
Pour into dish, top with berries.
Bake 35–40 minutes until set and golden.
Cool slightly before slicing and serving.
Notes
Store in fridge up to 5 days or freeze slices.
Serve with yogurt, nut butter, or extra fruit.
Use flax eggs and plant-based yogurt for vegan version.
