Quick and flavorful sautéed vegetables with garlic, herbs, and a splash of lemon. Perfect as a healthy vegan side or base for bowls and wraps.

Ingredients

1 red bell pepper, sliced
1 zucchini, sliced into half-moons
1 small head broccoli, cut into florets
1 carrot, thinly sliced
½ red onion, sliced
2 cloves garlic, minced
1.5 tbsp olive oil
1 tsp Italian seasoning
Salt and pepper to taste
Juice of ½ lemon
Optional: chili flakes, fresh parsley

Instructions

  1. Heat oil in large skillet over medium-high heat.
  2. Add carrots and broccoli. Cook 3–4 mins.
  3. Add bell pepper, zucchini, and onion. Cook 5–6 mins, stirring occasionally.
  4. Stir in garlic and seasoning. Cook 1–2 mins.
  5. Finish with lemon juice. Adjust salt and pepper.
  6. Serve hot, garnished as desired.

Notes

Use what vegetables you have. Avoid overcrowding the pan. Great with rice or protein add-ins.
