1 lb lean breakfast sausage
1 cup black beans, rinsed and drained
1 cup shredded cheddar or Mexican cheese blend
1 bell pepper, diced
½ onion, diced
1 tbsp olive oil
Salt and pepper to taste
8–10 large flour tortillas
