This Healthy Banana Bread is moist, fluffy, and naturally sweetened — made vegan and gluten-free with oat and almond flours. A wholesome twist on a classic comfort food.
3 ripe bananas (about 1¼ cups mashed)
1 tbsp ground flaxseed + 3 tbsp water
¼ cup maple syrup
¼ cup almond milk
1 tsp vanilla extract
1 cup oat flour
¾ cup almond flour
1 tsp baking powder
½ tsp baking soda
½ tsp cinnamon
¼ tsp salt
Optional: ⅓ cup chocolate chips or chopped nuts
Preheat oven to 350°F and line a 9×5″ loaf pan.
Mix flaxseed and water, let sit 5 min.
In a bowl, mash bananas. Stir in flax egg, maple syrup, milk, and vanilla.
Add flours, baking powder, baking soda, cinnamon, and salt. Mix gently.
Fold in chocolate chips or nuts if using.
Pour into loaf pan and smooth top.
Bake 45–55 min, until toothpick comes out clean.
Cool before slicing.
Use very ripe bananas. Store in fridge up to 5 days or freeze slices for later.
