A quick and flavorful one-skillet dinner with seasoned ground beef, tender sweet potatoes, and bold Southwest spices. Perfect for weeknights or meal prep.

Ingredients

  • 1 lb ground beef (85% lean)
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 small sweet potatoes, peeled and diced
  • 1 bell pepper, chopped
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika
  • 1/2 tsp dried oregano
  • Salt and pepper, to taste
  • 1/3 cup water or broth
  • Juice of 1/2 lime
  • Optional toppings: avocado, cilantro, shredded cheese, sour cream, hot sauce

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add onion and garlic; cook until softened.
  2. Add ground beef and cook until browned. Drain excess fat if needed.
  3. Stir in chili powder, cumin, paprika, oregano, salt, and pepper.
  4. Add sweet potatoes, bell pepper, and water or broth. Cover and cook 10–12 minutes until potatoes are tender.
  5. Stir in black beans and lime juice. Cook 2–3 minutes more.
  6. Serve hot with desired toppings.

Notes

Use turkey or lentils for a lighter version. Great over rice, in wraps, or with tortilla chips.
