This Garlic Butter Steak and Potatoes Skillet is a one-pan dinner packed with flavor. Juicy seared steak, crispy golden potatoes, and a rich garlic herb butter sauce come together in just 30 minutes.

Ingredients

  • 1 lb sirloin or NY strip steak, cubed
  • lbs baby potatoes, halved
  • 4 tbsp unsalted butter
  • 2 tbsp olive oil, divided
  • 45 cloves garlic, minced
  • 12 tsp fresh parsley or thyme
  • Salt and black pepper, to taste
  • Optional: paprika, red chili flakes

Instructions

  1. Boil potatoes in salted water for 8–10 minutes. Drain and pat dry.
  2. Heat 1 tbsp oil in a skillet. Sear steak in batches, 2–3 minutes per side. Set aside.
  3. Add 1 tbsp oil and crisp potatoes cut-side down until golden.
  4. Push potatoes aside, melt butter, and sauté garlic for 30–60 seconds.
  5. Return steak, add herbs, and toss everything together in garlic butter.
  6. Serve hot with parsley garnish.

Notes

Use ghee for high-heat cooking. Swap steak for shrimp or chicken. Add green beans or mushrooms for a full one-pan meal.
