½ cup almond butter (unsweetened)
2 large eggs
¼ cup unsweetened cocoa powder
2 tbsp erythritol or other low-carb sweetener
1 tsp vanilla extract
½ tsp baking soda
Pinch of salt
(Optional) 2 tbsp sugar-free chocolate chips
Preheat waffle iron and lightly grease with coconut oil or spray.
In a bowl, whisk almond butter, eggs, and vanilla until smooth.
Stir in cocoa powder, sweetener, baking soda, and salt until well combined.
Fold in chocolate chips if using.
Pour batter into hot waffle iron (do not overfill).
Cook 2–3 minutes or until crisp on the outside.
Carefully remove and cool on a wire rack.
Repeat with remaining batter. Serve warm with desired toppings.
