2–3 lbs bone-in chicken thighs or drumsticks
1 onion, sliced
1 bell pepper, sliced
2 scallions, chopped
2 garlic cloves, minced
1 tsp allspice
1 tsp fresh thyme
½ Scotch bonnet pepper, diced
1 tbsp browning sauce
1 tbsp soy sauce or Worcestershire sauce
1 tbsp ketchup
1 tomato, chopped
1 cup water or chicken broth
Salt and black pepper to taste
2 tbsp oil
