Ingredients

8 oz lo mein noodles (or spaghetti)
1 lb chicken breast or thighs, thinly sliced
1 tbsp cornstarch
2 tbsp oil (canola or avocado)
1 red bell pepper, thinly sliced
1 cup shredded carrots
1 cup snow peas or cabbage
3 green onions, sliced
3 cloves garlic, minced
1 tsp grated fresh ginger
Sauce:
3 tbsp soy sauce
2 tbsp oyster or hoisin sauce
1 tbsp sesame oil
1 tsp sugar
Optional: chili flakes or sriracha
Instructions
Cook noodles until al dente. Rinse and set aside.
Toss chicken with 1 tsp soy sauce and cornstarch. Let marinate 5–10 minutes.
In a wok or skillet, heat 1 tbsp oil and cook chicken until browned. Remove and set aside.
Add more oil if needed. Stir-fry vegetables for 3–4 minutes.
Add garlic and ginger; cook 30 seconds.
Return chicken to the pan. Add noodles and sauce. Toss to coat evenly.
Cook 2–3 minutes until heated through. Garnish and serve.
