This easy Chicken Lo Mein is a quick, flavorful noodle stir-fry with juicy chicken, colorful vegetables, and a rich savory sauce. Ready in just 30 minutes!

 

Ingredients

  • 8 oz lo mein noodles (or spaghetti)
  • 1 lb chicken breast or thighs, thinly sliced
  • 1 tbsp cornstarch
  • 2 tbsp oil (canola or avocado)
  • 1 red bell pepper, thinly sliced
  • 1 cup shredded carrots
  • 1 cup snow peas or cabbage
  • 3 green onions, sliced
  • 3 cloves garlic, minced
  • 1 tsp grated fresh ginger

Sauce:

  • 3 tbsp soy sauce
  • 2 tbsp oyster or hoisin sauce
  • 1 tbsp sesame oil
  • 1 tsp sugar
  • Optional: chili flakes or sriracha

Instructions

  1. Cook noodles until al dente. Rinse and set aside.
  2. Toss chicken with 1 tsp soy sauce and cornstarch. Let marinate 5–10 minutes.
  3. In a wok or skillet, heat 1 tbsp oil and cook chicken until browned. Remove and set aside.
  4. Add more oil if needed. Stir-fry vegetables for 3–4 minutes.
  5. Add garlic and ginger; cook 30 seconds.
  6. Return chicken to the pan. Add noodles and sauce. Toss to coat evenly.
  7. Cook 2–3 minutes until heated through. Garnish and serve.

  • Customize with any veggies or proteins you like.
  • Make gluten-free with tamari and GF noodles.
  • Store leftovers up to 4 days.
