This Cheesy Ground Beef Rice Casserole is the ultimate comfort food — creamy, savory, and packed with tender beef, rice, and melty cheese.

  • lbs lean ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 3 cups cooked white rice
  • 1 can cream of mushroom (or chicken) soup
  • ½ cup milk or broth
  • 1 cup shredded cheddar
  • 1 cup shredded mozzarella
  • ½ cup shredded cheddar (for topping)
  • Optional: 1 can diced tomatoes, drained
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp paprika
  • Optional: 1 tsp Italian seasoning
  • Optional: 2 tbsp parmesan (topping)

Instructions

  1. Preheat oven to 375°F. Grease a 9×13-inch casserole dish.
  2. Sauté onion in olive oil, add beef, and cook until browned. Add garlic and seasonings. Drain fat.
  3. In a large bowl, combine cooked beef, rice, soup, milk, 1 cup cheddar, mozzarella, and optional tomatoes or herbs.
  4. Spread into prepared dish. Top with remaining cheddar and parmesan.
  5. Cover with foil (optional) and bake for 25–30 minutes, removing foil last 5 minutes for browning.
  6. Let rest 5–10 minutes before serving.
