Slow Cooker Garlic Butter Beef with Potatoes is a rich, savory one-pot meal featuring melt-in-your-mouth beef and tender baby potatoes simmered all day in a garlicky herb butter sauce.

34 lbs beef chuck roast, cut into large chunks
1.5 lbs baby potatoes, halved if large
6 garlic cloves, minced
1/2 cup (1 stick) unsalted butter
1 tbsp Worcestershire sauce
1 tsp Italian seasoning
1/2 cup beef broth
Salt and pepper to taste
Optional: chopped fresh parsley for garnish

Instructions

  1. Season beef with salt and pepper.
  2. Melt butter in a saucepan. Add garlic, Worcestershire, and Italian seasoning. Cook 1–2 minutes.
  3. Place potatoes in slow cooker and season lightly.
  4. Add beef on top of potatoes.
  5. Pour garlic butter mixture over meat and potatoes. Add broth around edges.
  6. Cover and cook on LOW 8–9 hours or HIGH 4–5 hours, until beef is tender.
  7. Shred beef gently and stir to coat with sauce.
  8. Garnish with parsley and serve.

Notes

For deeper flavor, sear beef before slow cooking. Add carrots or mushrooms in final hours for variation. Avoid opening lid while cooking.
