12–15 frozen potstickers (any flavor)
6 cups low-sodium vegetable or chicken broth
1 tbsp sesame oil
2 garlic cloves, minced
1 tbsp fresh ginger, grated
2 tbsp low-sodium soy sauce
1–2 tsp rice vinegar (optional)
2 cups bok choy, spinach, or napa cabbage
½ cup shredded carrots or mushrooms
2 green onions, chopped
Salt and pepper to taste
Instructions
Heat sesame oil in a large pot over medium heat. Add garlic and ginger; sauté 1 minute.
Pour in broth, soy sauce, and vinegar. Bring to a simmer.
Add potstickers and cook 6–8 minutes or per package directions.
Stir in vegetables during the last 3–4 minutes of cooking.
Taste and adjust seasoning. Serve hot topped with green onions and sesame seeds.
Notes
Add sriracha or chili oil for heat.
Use gluten-free potstickers and tamari if needed.
Store broth and dumplings separately for best texture.
