A flavorful, quick one-pan balsamic chicken with juicy tomatoes, sweet onions, and a tangy glaze—perfect for busy weeknights.

Ingredients

  • 4 boneless, skinless chicken thighs or breasts
  • 1/3 cup balsamic vinegar
  • 2 tbsp olive oil
  • 2 tbsp honey or maple syrup
  • 3 garlic cloves, minced
  • 1 pint cherry tomatoes
  • 1 red onion, cut into wedges
  • 1 tsp dried Italian herbs (or fresh rosemary/thyme)
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 425°F (220°C). Pat chicken dry and season with salt, pepper, and herbs.
  2. In a bowl, mix vinegar, olive oil, garlic, and honey. Marinate chicken in half the mixture for 20 minutes.
  3. Arrange chicken, tomatoes, and onions in a single layer on a greased sheet pan or oven-safe skillet.
  4. Roast for 25–30 minutes, flipping chicken halfway through.
  5. Drizzle remaining balsamic mixture over chicken and veggies. Roast another 5–7 minutes until glaze thickens.
  6. Let rest 5 minutes before serving. Spoon glaze over top.
