A low-carb, one-skillet meal with all the flavor of an egg roll—without the wrapper. This keto Egg Roll in a Bowl is rich, savory, quick to make, and perfect for meal prep or weeknight dinners.

Ingredients

  • 1 lb ground pork (or beef, turkey)

  • 4 cups shredded cabbage or coleslaw mix

  • ¼ cup shredded carrots (optional)

  • 3 cloves garlic, minced

  • 1 tbsp fresh grated ginger

  • 23 tbsp soy sauce, tamari, or coconut aminos

  • 1 tsp toasted sesame oil

  • 1 tsp rice vinegar (optional)

  • 1 tbsp avocado or olive oil (for sautéing)

  • Salt and pepper to taste

  • Garnish: green onions, sesame seeds, chili flakes

Instructions

  1. Heat oil in skillet. Add ground pork and cook until browned.

  2. Stir in garlic and ginger; cook for 1 minute.

  3. Add cabbage (and carrots), cook until wilted (5–7 mins).

  4. Add soy sauce, vinegar, salt, and pepper. Cook 1–2 more minutes.

  5. Turn off heat and stir in sesame oil.

  6. Top with green onions, sesame seeds, and optional chili sauce.

Notes

Skip carrots for strict keto. Serve over cauliflower rice or top with egg. Stores up to 4 days in fridge.
