1 lb chicken breast or thighs
2 medium sweet potatoes, diced
1 tbsp olive oil (plus more for cooking)
1 tsp paprika
½ tsp garlic powder
Salt and pepper, to taste
1 cup uncooked rice (or cauliflower rice)
2 cups spinach, kale, or other greens
Optional toppings: avocado, feta, seeds, sauce of choice
Preheat oven to 425°F. Toss sweet potatoes with oil and seasonings. Roast for 25–30 mins.
Cook rice per package instructions.
Season chicken and cook in skillet 5–7 mins per side. Rest and slice.
