Easy Cheesy Taco Rice Dinner (One Pan)

A one-pan Tex-Mex–style skillet with seasoned meat, tender rice, and melted cheese.

Ingredients

1 pound ground beef
1 small onion, diced
2 cloves garlic, minced
1 packet taco seasoning
1 cup long-grain white rice
1 can diced tomatoes (14.5 ounces)
2 cups chicken or beef broth
1 1/2 cups shredded cheese

Instructions

  1. Brown ground beef in a skillet and drain excess fat.
  2. Add onion and cook until soft, then add garlic.
  3. Stir in taco seasoning and rice.
  4. Add tomatoes and broth; bring to a simmer.
  5. Cover and cook until rice is tender.
  6. Top with cheese and cover until melted.

Notes

Add vegetables or beans for variation. Reheat with a splash of broth if needed.
