2.5–3 lbs beef chuck roast, cut into cubes
Salt & pepper
1/4 cup all-purpose flour
2 tbsp oil (olive or canola)
1 onion, chopped
3 carrots, chopped
2 celery stalks, chopped
3 garlic cloves, minced
2 tbsp tomato paste
1 cup red wine (or more beef broth)
4 cups beef broth
1 tbsp Worcestershire sauce
1.5 lbs Yukon gold potatoes, cubed
1 tsp thyme
1/2 tsp rosemary
1 bay leaf
Optional: paprika, parsley for garnish
Instructions
Season beef and toss with flour.
Brown beef in oil in batches. Set aside.
Sauté onion, carrots, and celery. Add garlic and tomato paste.
Deglaze with wine, then add broth, herbs, Worcestershire, and browned beef.
Simmer covered for 1.5 hours.
Add potatoes and simmer uncovered for 30–40 minutes.
