ABC Soup is a beloved Asian-style chicken and vegetable soup made with carrots, potatoes, tomatoes, and bone-in chicken. Light, nourishing, and perfect for any time of day.
1 lb bone-in chicken (drumsticks, thighs, or leg quarters)
2 medium carrots, sliced
2 medium potatoes, cubed
2 tomatoes, cut into wedges
1 small onion, sliced
2 garlic cloves, smashed
7 cups water
1 tsp salt (or to taste)
Optional: white pepper, corn, celery, goji berries
Optional: Blanch chicken in boiling water 2–3 minutes. Rinse.
In a soup pot, add chicken, carrots, potatoes, tomatoes, onion, garlic, and water.
Bring to a boil, then reduce to a simmer.
Cover and cook for 45–60 minutes until chicken is tender.
Skim any foam, season to taste, and serve warm.
Store in the fridge up to 4 days or freeze for 2 months.
Add noodles, rice, or egg for a more filling version.
For richer broth, use bone-in thighs or pork ribs.
