For the Cookies:
1 cup unsalted butter, softened
1 cup granulated sugar
1 large egg
1½ tsp vanilla extract
½ tsp almond extract (optional)
2½ cups all-purpose flour
1½ tsp baking powder
½ tsp salt
1 tbsp cornstarch (optional)
For the Frosting:
½ cup unsalted butter, softened
2 cups powdered sugar
2–3 tbsp heavy cream or milk
½ tsp vanilla or almond extract
Red and green food coloring (gel preferred)
Holiday sprinkles (optional)
Instructions
Preheat oven to 350°F. Line baking sheets with parchment paper.
Cream butter and sugar until light and fluffy. Add egg and extracts, mix well.
Whisk together flour, baking powder, salt, and cornstarch. Mix into wet ingredients until dough forms.
Scoop dough into large balls (2–3 tbsp). Flatten slightly and place on baking sheet.
Bake 9–11 minutes until edges are set. Cool completely.
For frosting: Beat butter until smooth. Add powdered sugar, cream, and extract. Beat until fluffy.
Tint frosting and spread or pipe onto cooled cookies. Decorate with sprinkles.
