All the comforting flavors of Chicken Parmesan in a creamy, slow-cooked soup—perfect for parties, meal prep, or weeknight dinners.

Ingredients

  • lbs boneless skinless chicken breasts or thighs
  • 1 (28 oz) can crushed tomatoes
  • 4 cups low-sodium chicken broth
  • 1 medium onion, diced
  • 4 garlic cloves, minced
  • 1½ tsp Italian seasoning
  • ½ tsp red pepper flakes (optional)
  • Salt and black pepper, to taste
  • 4 oz cream cheese, cubed
  • ½ cup freshly grated Parmesan
  • ½ cup heavy cream or half-and-half (optional)
  • Cooked pasta (optional)
  • Fresh basil or parsley (optional garnish)

Instructions

  1. Add chicken, tomatoes, broth, onion, garlic, and seasonings to the slow cooker.
  2. Cook on low 6–7 hours or high 3–4 hours.
  3. Remove and shred chicken. Return to pot.
  4. Stir in cream cheese and Parmesan until melted.
  5. Add cream or cooked pasta, if using.
  6. Taste and adjust seasoning.
  7. Serve hot with toppings of choice.

Notes

  • Freeze leftovers in airtight containers.
  • Add spinach or kale during last 30 minutes for extra greens.
  • For extra richness, top with shredded mozzarella.
