This Crock Pot creamy chicken parmesan soup is a cozy, cheesy twist on the classic Italian favorite — slow-cooked chicken, rich tomato base, and melty cheese in every spoonful.

Ingredients

lbs boneless skinless chicken breasts or thighs
1 can (28 oz) crushed tomatoes
3 cups low-sodium chicken broth
3 cloves garlic, minced
1 tbsp Italian seasoning
1 cup heavy cream or half-and-half
½ cup grated parmesan cheese
1 cup shredded mozzarella cheese
Salt and pepper to taste
Optional: red pepper flakes, fresh basil, cooked pasta

Instructions

  1. Add chicken, crushed tomatoes, broth, garlic, seasoning, salt, and pepper to Crock Pot. Stir to combine.
  2. Cover and cook on low for 6–7 hours or high for 3–4 hours.
  3. Remove chicken, shred with forks, and return to pot.
  4. Stir in cream and parmesan cheese. Cook on low for 15–20 minutes.
  5. Add mozzarella just before serving. Stir until melted.
  6. Ladle into bowls and garnish as desired.

Notes

Add cooked pasta or spinach for variety. Use coconut milk and dairy-free cheese for a dairy-free option.
