2 large chicken breasts, pounded to even thickness
1 tsp salt + 1/2 tsp pepper
2 tbsp olive oil + 2 tbsp butter, divided
8 oz mushrooms, sliced
3 garlic cloves, minced
1/2 cup chicken broth
3/4 cup heavy cream
1/4 cup grated Parmesan (optional)
1/2 tsp dried thyme or Italian seasoning
Fresh parsley, for garnish
Instructions
Season chicken with salt and pepper.
Sear in olive oil and butter, 4–5 mins per side. Remove from pan.
Sauté mushrooms in butter until browned. Add garlic and cook 30 secs.
Deglaze with broth. Add cream, cheese, and herbs. Simmer 5 mins.
Return chicken, spoon sauce over, and simmer 2 mins more.
